Oodles of Noodles

I just had a bowl of beef brisket noodles and am smiling from ear to ear.  Really, sometimes there is nothing that can satisfy like a bowl of beef brisket noodles- Hong Kong style please!  The way the meat just melts in your mouth is simply amazing.

Unfortunately, I don't know how to make this and always have to go search high and low for a good plate.  Maybe, one day, I'll learn how to make it (and make it well!)

Best Shopping, Best Airport

hongkong.jpgNothing beats getting stuck in Hong Kong if you love food, shopping, and have lots of time to kill.  It's really the best place to be if you've got a few hours before your next flight.  You just need to train in, easily find a bargain in one of the stores, and head back.  If you don't want to deal with that, the airport has enough shopping to satisfy any wallet and palette.  I love Hong Kong!

The cities, the mountains, and the sea

Someone asked me the other day where I would live if I had the choice: the city, the mountains, or by the sea. I really had to think about it because I do enjoy all three and that's why Hong Kong is really the ideal place, mountain, city, and sea all rolled into one. But barring HK, I do prefer the life found in the mountains than the vast emptiness that the sea sometimes evokes, especially at night. Mountains are always spectacular, whether viewing from down below or standing high atop the peak looking far and away above the clouds.

Of course, I do have another problem because I have height phobia- a debilitating one when faced with a sheer cliff. To see life in the sea, you have to go into it. I am PADI licensed but my diving skill is still at the beginners level -i.e., I can only dive down to 40 feet deep at most. So, I never really get to go down as deep as I would as high. Make sense?

I also get serious sea-sickness when waiting too long for others in a small boat tossing about. So for sea-faring adventures, the one that I prefer is actually the pampering ones. The kind where there is plenty of food, drink, and even a comfy bed. Yes, I am talking about a cruise ship where sea-sickness is the farthest from my mind. And when I just want to be alone with the ocean and stare out into a brilliant night sky filled with stars instead of bright city lights, I just need to go out on deck and find a quiet space.

Singapore has a lot of cruises now. Unfortunately, far too many involve company sponsored retreats and incessant, noisy, gambling more than anything else. So I prefer the royal caribbean, Norwegian Cruise Line and Celebrity Cruises where you have a very different type of crowd that enjoys the fun but also takes time to appreciate nature.

So which do I prefer? City, Mountain, Sea? The great thing is I don't have to choose.
